10 ounce of thin rice noodles.

·       3 Tbsp. Oil. 

·       1 pound boneless skinless chicken breast, sliced and cut into small cubes.

·       1 cup bean sprouts.

·       ½ cup of carrots shredded.

·       4 garlic cloves, minced.

·       3 eggs, beat them.

·       3 green onions sliced.

·       For toppings: Chopped peanuts, some crushed red chili flakes, and lime wedges.

 

SAUCE INGREDIENTS:

 

·       1/3 cup brown sugar.

·       ¼ cup of fish sauce.

·       ¼ cup tamarind concentrate.

·       2 tbsp. Soy sauce.

·       Juice of 1 fresh lemon.

·       ¼ tsp. crushed red chili flakes. (According to taste)

Instructions:

For Sauce:

Mix all the ingredients in a bowl and blend them well. Set this mixture aside.

For noodles:

Now cook your noodle according to the instructions mentioned on the noodles packing. Drain the noodles into the strainer and rinse them with cold water. Toss them gently with some oil to prevent them from sticking together.

Cook Chicken:

Now, after you have boiled the noodles, heat 1 tbsp. Oil in a large pan, on high flame. Add the chicken and sauté it for 3-4 minutes; toss the chicken until it turns light golden from the edges. Transfer the chicken to a plate. 

Cook Vegetables:

Now it's time for you to cook the vegetables. Add 1tbsp oil in a pan and add the peanuts, bean sprouts, carrots, and garlic. Sauté these for 2 minutes.

Thai Fried Rice:

Ingredients:

·       8 oz chicken breast cut in ½ inch cubes.

·       Kosher salt and pepper according to taste.

·       4tsp cooking oil.

·       Three cups cooked brown jasmine rice.

·       ½ large onion finely chopped.

·       3 garlic cloves, minced.

·       2 scallions finely chopped.

·       3 egg whites, well beaten.

·       1 whole egg, well beaten.

·       2 tomatoes, sliced into wedges.

·       2-3 Thai chili peppers.

·       4tsp soy sauce.

·       2 tsp. Fish sauce.

 

Instruction:

 

Heat the oil in a nonstick wok on high flame.

Meanwhile, marinate the chicken with some salt and pepper.

When the wok is well hot, add 2 tsp. Oil.

Add the chicken and cook it on high flame until the chicken is brown—Cook for about 3-4 minutes.

Remove the chicken from the wok and set it aside.

Now add the eggs in the wok and pinch of salt and cook for 1 -2 minutes. Set aside.

Add the remaining oil and onion, scallions, and garlic.

Sauté it for 1 minute, add the chili pepper, tomatoes and stir in all the rice.

Add the soy sauce and fish sauce mix all the ingredients.

Add more soy sauce according to your taste and stir well for 30 seconds.
