Welcome, my friends to the third blog in our new series of culinary adventures. Let’s wrap up our trip to Mediterranean-inspired Italy with a pie of the distinguished, light and fluffy (but dense! ) Napoleon. Watch out, I might have to stop by again soon!

### Volume

A tablespoon is a non-scientific but very widely used unit of volume, which works very well in cooking, herbal medicine, etc. It is represented by a capacity of one tablespoon which varies from roughly 15 mL in the US to 20 mL in Australia. The main advantage of this unit is its being very handy. A tablespoon is commonly abbreviated to tbs or tblspn.Known as the US fluid ounce, the unit of volume for liquid substances is used as ounce in the US and other countries practicing the US Customary system. It is equals to approximately 1/8 of US cup, 1/16 of US pint, approximately 1.040842731 Imperial Fluid Ounces, 2 tablespoons or 6 teaspoons. The name ounce is derived from an old Latin word Onza, and the symbol adopted for this unit is fl oz.The volume is used in several situations in order to obtain the measured quantity of space occupied by a solid, or the amount of material (liquid, gas or solid) that it may contain. The solid used in the calculation of the volume is the cube because, as each of its facets is composed of square, the latter has a regular formula. The volume is therefore represented by the following global formula: side (length) multiplied by another side (width) and multiplied by another side (height). But that difference becomes much more noticeable when you consider a gallon of milk, which in the US is 3,785 ml versus 4,546 ml in Britain. That’s over 3 US cups more milk when you pay in pounds instead of dollars! The smaller the unit of measurement on your scale, the more accurate your weights will be. It’s hard to see variations of a few grams when you’re using a scale that’s calibrated in quarter-pound units, but it’s easy to see these differences on a digital scale that displays every single ounce or gram. Grams are a measurement of weight, and peanut butter, for example, which is dense, has a different density from flour, which is fluffy.
