Your cooking times will vary depending on the size of your prime rib roast. To calculate your cooking time, multiply the exact weight of the roast by 5. Round the resulting number to the nearest whole number. The rib is cooked at 500 degrees F for exactly that many minutes. For example, for a 6-pound roast: 6x5=30, so cooking time is 30 minutes. What Cut Is Prime Rib Meat?

There are 2 grades of prime rib at the grocery store; prime grade and choice grade. Prime grade has more fat and marbling and can be considerably more expensive per pound. Ask your butcher whether your roast is prime or choice because it isn’t always clear on the packaging and most cuts sold are actually “choice”. This recipe works for either prime or choice, so go with the best you can buy.

1. Sprinkle meat all over with about 2 tsp salt, cover loosely with plastic wrap and let it rest on the counter for 3 hours to come to room temperature. The roast will bake more uniformly if it is near room temperature. When nearly at room temperature, Preheat the Oven to 500ËšF with a rack in the lower third of the oven.

About the Price:

This section of beef is so tender and delicious that it comes at a cost. Most local grocery stores carry choice-grade prime rib for between $10.99 to $11.99 per pound. I’ve found Costco to have the lowest prices for the best quality. They even sometimes carry prime-grade meat.

Tips for Perfect Prime Rib:

Use a meat thermometer! You can use a probe that stays inside the meat the entire time it cooks or you can use a simple instant-read meat thermometer. I know this is a culinary no-no, but we don't link pink meat, so while I partially use this method, I didn't do it exactly as Chef John suggests. I had a 4 lb boneless rib roast, which I let sit out at room temp for 4 hours. While the meat was coming to room temp I also let my butter sit out to soften. I placed the butter in a small bowl, added about 1 Tbsp of extra virgin olive oil, 4 tsp of coarse kosher salt, 2 tsp freshly ground black pepper, 6 minced garlic cloves, and 2 tsp of thyme. (We don't care for Herbs de Provence.) I mixed this up with a fork then slathered the meat all over with it. I roasted the meat for 20 minutes at 500 degrees to get a nice crust, then I reduced the oven temp to 325 and continued roasting for another two hours. This gave us meat which was almost well done.
