Because potatoes are so starchy, they tend to absorb a lot of moisture. This means that during the thawing process they take on extra moisture and can become very grainy. Also, some dairy-based soups have a tendency to separate and lose their creaminess after freezing. It’s definitely best enjoyed immediately!
