For a Crunchier Topping and Firmer Consistency:

Prepare recipe as directed but bake at 350 or 375 F degrees for 20-30 minutes. Broil at the end of baking for approximately 2-5 minutes, until golden brown and crunchy. (Source: www.thechunkychef.com)

Best Cheese for Mac and Cheese?

A combination of Gruyere and mozzarella cheese. Gruyere for the most superior flavour with the best melting qualities for creamy sauces such as this – there’s no contention in my view. And mozzarella for stretch – nothing does the cheese pull like a good mozzarella!

Recipe Notes:

1. Panko breadcrumbs are larger pieces than normal breadcrumbs which creates a really nice extra crunchy topping. It can be found in the Asian section of supermarkets here in Australia. Can sub with normal breadcrumbs

Simple Macaroni and Cheese Recipe

Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.

My kids have started asking for this over pizza for family movie night! And our 7 year old friend from Australia mentioned that the food at Tucanos Brazilian Barbeque and my Mac and Cheese are the best food she's had in America. I use 1 to 1 1/2 cups of Monterrey Jack Cheese (to avoid annatto food coloring in cheddar), and 1/2 cup or so Philadelphia Cream Cheese. And we use whatever shape pasta we have on hand. Other than that I follow the recipe as written.
