When I hear buttermilk, comes to my mind the hot summers. When looking for something for refreshments, buttermilk was always the best option. Chilled buttermilk with little spice is a treat for a thirsty and tired body.

Buttermilk is a drink that is a byproduct of butter. It is also obtained by fermenting milk by adding lactic acid bacteria to it. It is leftover cultured cream or milk after churning butter. Nowadays, it is also made with sweet cream and by culture. It is a low-fat and high-protein drink.

Recipes using buttermilk:

  • Refreshment drink.
  • Pancakes, Waffles, Biscuits, Cinnamon rolls, Brownies, Fudge
  • Coleslaw, Ranch dressing
  • Ice-creams, Sherbets, Shakes
  • Fried chicken.
  • Soups, Onion rings
  • Cornbread, Chess pie, Bread cakes
  • Dumplings and Chicken
  • Cookies, Donuts, Muffins, and More.

Its acidic nature and tenderizing property give a light, moist and tender texture and its acidity activates the baking soda and helps as a rising agent. Making it the best ingredient to use in dishes and buttermilk is not always kept at home. But there are a lot of methods and substitute recipes that can be used instead of store-bought buttermilk.

Buttermilk Substitute Recipes:

  • Milk and vinegar or lemon juice - To 1 cup milk add 1 tablespoon of vinegar or 1 tablespoon of lemon juice and stir. You can let it stay for 10 minutes.
  • Milk and tartar cream- Add 1 and 3/4th teaspoon of cream of tartar to a cup of milk. to avoid clumping you can whisk the cream of tartar with 2 tablespoons of milk and then add it to a cup of milk.
  • Sour cream and water or milk- Mix 3/4th cup of sour cream with 1/4th of water or milk. whisk until it gets smooth.
  • Plain yogurt and water or milk- Mix 3/4th cup of plain yogurt and 1/4th cup of water and milk and whisk till it gets smooth.
  • Plain kefir- A cup of plain unflavored kefir can be used instead of a cup of buttermilk.
  • Buttermilk powder and water- To make one cup of buttermilk you need to add 1 cup water to 1/4th cup of buttermilk powder.

There are many different methods for making buttermilk. To begin with, let's see how buttermilks are prepared at home.

How to make buttermilk at home:

Preparing buttermilk is very easy. With 2 to 3 ingredients one can prepare them at home. There is also a traditional method wherein olden days people used to prepare. But nowadays nobody likes to increase their work between the busy days, one opts for the simplest recipe. Let's see both the methods of preparation.

Traditional homemade buttermilk recipe :

Cultured buttermilk is tangy, sour, and when used for preparing pancakes, biscuits, and cakes it gives extra airy texture and moisture. So, most people like it. But buttermilk obtained from this method is not so thick in texture as commercially made buttermilk. But this remains fresh for a longer period.

Recipe:
  • After the butter is churned, collect the liquid that is left.
  • This is a slightly sour liquid low in fat and high in proteins.
  • This is used as buttermilk.
  • This buttermilk will be thinner and can be used in other recipes and also as a refreshing drink by spicing it up according to your choice.

Another method is by fermenting (Old fashioned method) ;

  • In a clean jar pour a little quantity of buttermilk
  • If you are taking a half-gallon jar then add half a cup of buttermilk into it.
  • Now add plain milk and to it.
  • Add two tablespoons of heavy cream to it.
  • Close the jar tightly with a lid and shake the jar vigorously for a minute.
  • Place in a warm area.
  • Let it remain for 24 to 36 hours until gets thick.
  • Keeping turning it 2 to 3 times during these hours.
  • Refrigerate it and use it whenever you want.
  • Buttermilk is ready!

Modern method :

Buttermilk prepared these days commercially are by treating milk with cultures. The resulted stuff will be thick and tangy. And so easy to prepare that one can prepare it at home with only two ingredients that are found commonly in the kitchen.

Ingredients :

Lemon juice or vinegar
Milk
Recipe :
  • Take 1 cup of milk in the jar.
  • Add to it 2 tablespoons of freshly squeezed lemon juice or vinegar.
  • Stir it well until it gets combined.
  • Leave for 30 minutes at normal room temperature.
  • The milk becomes acidic by curdling.
  • Refrigerate and use it whenever required.

This is how homemade buttermilk is prepared. Buttermilk prepared by curdling the milk with vinegar or lemon juice. When milk and lemon juice get combined, the milk is curdled. Instead of lemon juice, vinegar too can be used. Any kind of vinegar is fine, but white vinegar is preferred most.

This way, make homemade buttermilk just with 2 ingredients present in your kitchen. One cup of milk and one tablespoon lemon and your substitute for buttermilk are ready. It is also prepared with sour cream, almond milk, as well. The vinegar would be plain white, colored or apple cider vinegar can be used.
