What Is Guacamole?

Guacamole is a dip made of avocados, lime, and other fresh ingredients. I like to serve it with tortilla chips or next to my favorite fajitas or tacos — I especially love spreading a little onto the bottom of these chili lime shrimp tacos. Try serving this alongside our easy red salsa and this homemade queso. After making guacamole over and over again (not complaining), we’ve found a few secrets for making the very best guacamole at home and based on what our friends say when we make it for them, we have a winner!

Delicious. NOTES: *I leave out the tomatoes and serve pico de gallo alongside. On the rare occasion there are leftovers, mixed-in tomato makes the guacamole go off faster. Same amount of work, just throw the tomatoes in a separate bowl and toss some extra onion, chili, cilantro, and lime. *Lime acts like salt on the palate, so add salt after the lime juice; you will end up using less. *I always add some ground toasted cumin seed and a seeded jalapeno. *Great with and without garlic. *Reserve half the avocado chunks to add at the end for textural variety. *The most important thing, though, is to use ripe avocados. Buy them a day or 2 beforehand, then let them sit in a brown paper bag on the counter with a ripe apple, pear, or bananas until the avocados are softer. *If the avocados aren't perfectly delicious, I add a little extra virgin olive oil to the mix. Get Your Lime-to-Avocado Ratio Just Right.

I’ve discovered that just over 2 teaspoons lime juice per mashed avocado is the perfect ratio for flavor and browning prevention. You might need a splash more lime juice if your avocados are particularly large.

How Long Does Guacamole Last?

Guacamole can keep for several days if you store it properly. Without any help, avocado flesh will turn brown when exposed to air. To prevent that from happening, place a chunk of onion on top of leftover guacamole. Yes, really! Then, cover the top of the bowl with plastic wrap. Conveniently, you’ll have half of one onion leftover from this recipe.
