Swap out the chicken for steak, tofu, and even portobello mushrooms. Or skip the protein and bump up the veggies. (Source: www.tasteofhome.com)

Very good! Although I used 2 sheet pans and doubled the seasoning. One pan was for the chicken which I marinated for 6 hours(used 6 chicken breasts sliced thin with the full amount of spices) . Also didn't use the full amount of oil.. Just drizzled in some olive oil. I marinated the onions, and 2 red bell peppers for 2 hours with only a drizzle of olive oil and full amount of spices. When ready to cook I planted them on their own baking sheet along with some sliced mushrooms (approx 3 Cups). The Lime really makes everything pop.. I'm a huge sucker for Lime so didn't measure that. Served Mine in a whole grain wrap with some Avacado. Will definitely make this again. My only suggestion is for people that like a lot of flavor definitely double spices, and no need for that much oil.. Just drizzle. Very good! Although I used 2 sheet pans and doubled the seasoning. Not every fajita recipes comes in a sizzling skillet that smokes up your kitchen. This fajitas recipe is crazy-easy — red bell pepper and onion slices are piled into a greased casserole dish and topped with chicken breast strips. Next, you drizzle with oil, sprinkle with seasoning mix, toss to coat and 35 to 40 minutes later dinner is served! We love the idea of assembling these fajitas at the table. Simply serve alongside tortillas, sour cream, salsa, and cilantro to complete the meal! Lime juice is a common condiment in Mexican cuisine. Just squeeze a little on the chicken and veggies for a bright, tangy flavor boost.

Chicken Fajitas would have to be one of the easiest recipes out there, BUT people (used to be me) usually opt to buy seasoning in a packet from the supermarket. Well, these chicken fajitas hit those packets over the head a million times over. Why buy it when you can make it SO MUCH BETTER yourself with just a handful of ingredients, and maybe only 3 extra minutes added to your prep time? (Source: cafedelites.com)
