For years I tried so many recipes and techniques for a juicy baked chicken breast. Disappointed every single time and had to chew through a mouthful of dry chicken, dipping each forkful in mayonnaise just to get through it. If you love food as much as I do, this is usually a completely heartbreaking experience.
A few weeks ago on Insta, I asked if you all might be interested in a back-to-basics series about the best ways to bake proteins (i.e. chicken, pork, steak, seafood, tofu, etc.) in the oven. And your answer? A resounding yes, please. Tons of you had requests and questions about methods for cooking various proteins, plus more than a few tales to tell about proteins gone not-so-right over the years. And oh boy, I hear ya. My little kitchen has seen more than its share of overcooked steaks, completely dried out pork chops, salmon skin glued to pans, and not-so-crispy tofu over the years too. Which are never fun, especially since proteins can be pricey and intended for special occasions. But hey, it’s all part of the adventure of learning how to cook. And eventually, I’ve trial-and-errored my way to some basic methods for making proteins that have become super-reliable, super-delicious staples in my kitchen.
This one-dish roast chicken with vegetables tastes as if it took hours of hands-on time to put together, but the simple ingredients can be prepped in mere minutes. The rosemary gives it a rich flavor, and the meat juices cook the veggies to perfection. It’s unbelievably easy! —Sherri Melotik, Oak Creek, Wisconsin (Source: www.tasteofhome.com)
There is nothing better than a chicken that retains its natural juices after it’s cooked. This baked chicken is a home run recipe that delivers mouthwatering flavor AND texture. I have tried so many recipes and have been disappointed that the end result was always dry overcooked chicken. No matter how much sauce I would add to it to make it tolerable, it was just that. Tolerable. I wanted a recipe that was easy AND delivered delicious, juicy results and this recipe is exactly that!!
While you can overcook chicken thighs, it is more difficult to do than overcook chicken breasts. This is another reason I love cooking chicken thighs. It results in juicy meat every time as long as you bake until the internal temperature reaches 165 degrees.
