Nothing says "fall is here" quite like the smell of tender-baked apples filling your home. This simple and downright delicious apple crisp gives you all the flavor you could ever ask for in a dessert and is as quick to make as it is to finish. The cherry on top? A generous topping of cream or vanilla ice cream.

This kind of comes down to preference, or what you have available, but generally, you’re going to want a variety of apples that will hold their shape after baking and not turn to total mush. We had a huge bag of Honeycrisp apples (my personal favorite) to use up, so that’s what I used. Granny Smith is usually considered the best apples for apple pie, but Golden Delicious, Braeburn, and Pink Lady apples would all work well for this recipe, or for a pie.

Can I Make Apple Crisp Without Oats?

Yes, absolutely. To make apple crisp without oats, use the topping from apple crumble pie, only slightly increased. Use 3/4 cup (150g) brown sugar, 1 teaspoon ground cinnamon, 1 cup (125g) all-purpose flour, and 1/2 cup (115g) unsalted butter, melted and slightly cooled. Mix the brown sugar, cinnamon, and flour together. Using a fork, stir in the cooled melted butter until the mixture is thick and crumbly. Don’t over-mix– it will become a paste if you are over-mix. Use the same oven temperature and bake time as below. I prefer melted butter to keep the crumble topping on the softer side. If you want a crispy crumble topping, use cold butter and cut it into the mixture just as you do in the recipe below.

What Are the Best Apples for Apple Crisp?

I prefer using a sturdy cooking apple that’s slightly tart, like Granny Smiths. Other apples would work, like Braeburn or golden delicious, but sugar amounts and bake times might need to be adjusted.

Crumble topping: In a medium-size bowl combine the crumb topping ingredients with a fork or pastry blender until well combined. Refrigerate.

Make-Ahead and Freezing Instructions:

To Make Ahead: Make the apple filling as instructed but add an extra splash of lemon juice to keep the apples from turning brown. Store in an air-tight container, in the fridge, for up to one day. Make the crumb topping and store it separately in the fridge.
