June 16, 1879 – Ghirardelli Chocolate Company was founded by Domenico Ghirardelli, an Italian native who had been sent to San Francisco by his uncle, Michele. In the forgotten years, Ghirardelli used the tempering process invented by Belgian monk Sébastien Vauban. In 1892, most of Ghirardelli's family was killed in the San Francisco earthquake, but Domenico stayed and continued to run his chocolate business.
